Tasting Notes:
Following de-stemming and crushing, selected bunches underwent cold maceration prior to fermentation. Fermentation began cold and built to warmer temperatures, peaking at 30 degrees. In the early stage of fermentation the juice was pumped over twice daily for up to 30 minutes, reducing to once daily towards the end of ferment.
Post ferment the wine was drained and the skins gently pressed, with light pressings included back into the final blend. The various parcels of wine were then matured in French, American and European barriques for12 months. The wine was then racked from barrel, parcels blended, lightly fined with egg white and filtered prior to bottling.
